Sort beans carefully to remove broken beans and stones. Place in a pot and cover in plenty of water.

Bring to a boil, then strain.

Return beans to the pot and cover once more in plenty of water. Here, you may add any aromatics you like (carrot, celery, onion, or herbs and spices), but do not add salt. Over medium-low, bring water just barely to a simmer and hold. Don't let it boil.

Cook beans until just done, then season with salt.
