Githeri is a mixture of beans and maize which is cooked and served together.
It's origin is from the Agikuyu community from the central part of Kenya. It can be eaten on its own or with a drink. e.g tea

Steps

Wash the beans and maize and put in a sufuria with lots of water.

Put on a source of heat to boil and keep checking and adding water to prevent burning.

Boil until tender and well cooked. Remove from heat.

You can eat it like that but I decided to fry it.

On another sufuria, put chopped onions with the cooking oil until browned, add chopped tomatoes until tender.

Add salt, carrot, and the potatoes with a little water to cook the potatoes. Cover and let it cook.

When the potatoes are half cooked, add the boiled githeri and mix together, cover and let them cook together.

Cook until the potatoes are well cooked, and soft but not mushy.

Remove when ready and serve hot.

You can serve with tea and avocado as I did. Enjoy
