Ingredients

  1. 6bell peppers. any color you prefer
  2. 2 lbground beef
  3. 1 canspanish rice
  4. 1 canrotel
  5. 1 envelopetaco seasoning
  6. 2 cupmexican blend cheese

Cooking Instructions

    Cut tops off peppers and remove insides

    Mix ground beef, rice, and taco seasoning in mixing bowl

  3. 3

    Fill peppers with mix. You shouldn't have any left over. Stuff them!

    Place filled peppers in crock pot

  5. 5

    Spoon a little rotel on top of each pepper. Pour remainder into bottom of crockpot (gives a little extra juice)

    Cook on low 6-8 hours and high 3-4 hours. (The uncooked meat will cook the pepper. No need to precook the beef or add any liquid)

    20-30 minutes before meal time add cheese on top of each pepper.
