Ingredients

  1. 2 cupGrated carrots
  2. 1 1/2 cupCoconut oil
  3. 4Eggs beaten
  4. 2 cupSugar
  5. 2 cupFlour (Cup for cup Paleo)
  6. 2 tspBaking soda
  7. 1 1/2 tspSalt
  8. 5 tspCinnamon
  9. 2 1/2 tspBaking powder
  10. 1Raisins
  11. 1/2 cupChopped walnuts or pecans

Steps

  1. 1

    Preheat oven to 350°.

  2. 2

    Mix all ingredients.

  3. 3

    Reese and flour a Bundt pan.

  4. 4

    Bake one hour to one hour and 15 minutes.

  5. 5

    Let sit for 20 minutes before removing from pan.
