Ingredients

  • 2 cupGrated carrots
  • 1 1/2 cupCoconut oil
  • 4Eggs beaten
  • 2 cupSugar
  • 2 cupFlour (Cup for cup Paleo)
  • 2 tspBaking soda
  • 1 1/2 tspSalt
  • 5 tspCinnamon
  • 2 1/2 tspBaking powder
  • 1Raisins
  • 1/2 cupChopped walnuts or pecans

Steps

  1. 1

    Preheat oven to 350°.

  2. 2

    Mix all ingredients.

  3. 3

    Reese and flour a Bundt pan.

  4. 4

    Bake one hour to one hour and 15 minutes.

  5. 5

    Let sit for 20 minutes before removing from pan.
