1 pinchsalt
1 tsplemon juice
1/2 cupwater or just enough to cover the cashews

Blend the cashews with water until smoth

Pour into a cheese cloth to remove water (whey)

Pour the chesse in a bowl and add the salt and juice. Mix with a spatula.

Enjoy on crackers, fruit, salads, etc.
