Ingredients

  1. 750 gramswhite fish fillets, e.g. haddock, hake, cod, etc....
  2. 1 1/2 tspsalt
  3. 1 mediumonion, roughly chopped
  4. 2 tbspoil
  5. 1 largepinch of white pepper
  6. 2 tbspchopped fresh parsley
  7. 1 largeegg
  8. 1 tbspwater
  9. 3 tbspdry white breadcrumbs, for coating
  10. 1oil, for frying

    Wipe the fish with damp kitchen paper.

    Sprinkle the fish with the salt and leave in a cool place for 30 minutes.

    Cut the fish into pieces and mince with the chopped onions.

  4. 4

    Mix together the oil, pepper, parsley, egg and water in a large bowl.

  5. 5

    Add the minced fish and onion and the 3 tablespoons of bread crumbs and mix very thoroughly. The mixture should be stiff enough to hold its shape; if note, then work a little more water or more breadcrumbs if necessary.

    With wet hands, form the mixture into balls, then flatten them a little.

    Coat the fish cake with breadcrumbs and refrigerate until ready to fry.

    Heat enough oil to cover the base of a frying pan and when it's sizzling hot, fry the cakes in batches for 5-6 minutes each side until golden and cooked through.

    Serve hot with chips or creamed potatoes, or cold with salad.
