Ingredients

  1. 2 quartfresh strawberrie washed hulled and cut in half
  2. 1/2 cupgranulated sugar more if berries are not to sweet
  3. 1 pinchsalt and pepper
  4. 1/2 gallonvanilla ice cream using as much as fills your glasses
  5. 1/4cuo chocolate sauce such as hersheys special dark or your favorite
  6. 1Whipped cream
  7. 4marashino cherries
  8. 1 tbspchopped nuts if desired for garnish

Cooking Instructions

    Heat oven to 425

    line a rimmed bakind sheet with parchment papaer

  3. 3

    Toss strawberries with sugar salt and pepper in a bowl. The pinch of salt and pepper really enhances the roasted berried

  4. 4

    Place on prepared baking sheet in a single layer and roast 20 to 60 minutes depending on how juicy yur berries are check them and stir . They are done when juices have thickened and berries re darker but still hold their shape

    To assemble parfait, in a decorative glass place a scoop of vanilla ice cream, add a drizzle of chocolate sauce, then a scoop of warm berries add another scoop of vanilla ice cream, another drizzle of chocolate sauce top with more warm berries then add whipped cream nuts if using and a cherry

    Any leftover berries can be kept chilled and used for pancakes, waffles, oatmeal even on cereal. To re warm them place desired amount in small bowl and gently microwae just until hot

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
