  1. first pot
  2. 50 gramspre soak dried chili pepper
  3. 20 gramssliced ginger
  4. 25 gramssliced shallot
  5. 20 gramsspring onions
  6. 300 mlvegetable oil
  7. 2nd pot
  8. 50 gramsChili powder
  9. 15 gramsSichuan peppercorn

    First pot boiling oil

  2. 2

    In a pot heat oil up and put ginger, dried chili, shallot and spring onion fry till golden brown then remove from heat set aside

    2nd pot

  4. 4

    In another pot lightly toast chili powder with Sichuan peppercorn till pop then off heat and pour the first pot boiling oil and stir gently

    Keep all the ingredients in the chili oil for 3 days as it is

    After 3 days filter the oil and it's ready to be use
