Boil the chicken after washing it with vinegar and salt. Once the water boils, skim off any foam. Add 1 tablespoon salt, cardamom pods, bay leaves, whole black peppercorns, onion, cinnamon stick, and mastic. Continue boiling until the chicken is cooked.

Cut the potatoes into cubes and fry them halfway until lightly golden.

Chop the carrots and onion.

Once the chicken is cooked, strain the broth and remove the meat from the bones.

Sauté the carrots and onion in a little oil. Add 1/2 cup chicken broth and cook until the carrots are tender.

Garnish with a little parsley. Enjoy!

Add the chicken, broth, and potatoes to the carrots. Adjust the salt and pepper, sprinkle a pinch of turmeric for color, and let it simmer for a few minutes until ready.

You can add any vegetables you like, such as peas or squash.
