Sweet and Tangy Cordon Bleu

For all intents and purposes, this is a recipe for the classic Chicken Cordon Bleu with a twist! Traditionally prepared with breaded chicken surrounding ham with melted Swiss cheese, this version ups the ante with the sweet honey contrasting the tangy lemon to make a simple dinner that tastes like you've spent hours cooking.

Steps
- 1
Preheat oven to 350 degrees Fahrenheit
- 2
Slice the chicken breasts in half horizontally lengthwise so you wind up with a top and bottom half of the chicken breast. Season with salt and pepper.
- 3
In a skillet, heat the butter, lemon juice, and honey on a medium high heat until the butter is melted stirring consistently. Season with a touch of salt and pepper.
- 4
Taking care not to overcrowd the pan, add the chicken breast halves and sear until just the outer skin is cooked. Transfer to a greased baking tray.
- 5
By now, the honey lemon mixture in the pan will have caramalized into a brown syrup. Remove this from the heat and reserve.
- 6
Fry the bacon or ham in a separate frying pan. If using bacon, ensure that the bacon is cooked through but not crispy. If using ham, just give it a quick flash browning on high heat.
- 7
Place the bacon or ham on top of 4 of the chicken breast halves.
- 8
Spoon the reserved caramelized honey mixture evenly over the chicken and bacon/ham.
- 9
Place the remaining slices of Harvati cheese on top of the breasts then bake in the 350 degree oven for 15-20 minutes until the cheese is slightly browned and melted and the chicken is cooked through. Sprinkle with parsley to garnish and serve immediately.
