To book the Damper successfully ,the camp oven should be buried in coals and more coals stacked up on the lid to brown the top of the bread also .

Mix the flour and salt and add enough water to make a thick ,scone like dough . Knead a few times ,then place in the base of the camp oven and cover with lid and heap coals on top.( Or wrap tight in a lot of foil and insure it is fully buried ). Cook for about 20minutes . The legs of the camp oven will keep it just above the coals so the base of the damper will not burn .

TWISTERS : Pull off balls of damper dough and roll between the fingers into a long strip . Wrap strips in overlapping circles around one end of a long thin green stick . Cook ,turning, over hot coals for 10-15minutes or till golden . twisters should lift free from the stick easily . Best eaten filled with butter and jam .
