Ingredients

1 serving
  • 1 largechicken beast
  • 1 slicegoat cheese
  • 3 smallbasil leaves
  • 1 pinchsalt
  • 1 pinchpepper
  • 100 gramsmushrooms
  • 1 largeonion
  • 2 tbspcooking oil
  • 2 tspcurry powder
  • 150 mldouble cream
  • 1 1/2 dashwhite wine
  • 1 smallpiece of cling film

    put a small pot of water on high heat until it starts to boil. then put the heat down.

  2. 2

    take the chicken breast and butterfly it. ( open the breast like a book )

  3. 3

    sprinkle some salt and pepper on the chicken

  4. 4

    put the goat cheese

  5. 5

    and the basil

  6. 6

    get a piece of cling film and open if on a flat surface

  7. 7

    put the chicken on top and role like a sausage

  8. 8

    close it tight with a knot on each side

  9. 9

    put the chicken in the boiling water and cook for 35

  10. 10

    in the meantime finely chop the onions

  11. 11

    cut in half the mushrooms

  12. 12

    heat a medium size pen

  13. 13

    add the oil

  14. 14

    once its hot fry the onions

  15. 15

    add the mushrooms

  16. 16

    the curry and stir well

  17. 17

    cook for few seconds and add the wine

  18. 18

    reduce by half

  19. 19

    sprinkle some salt and pepper

  20. 20

    add the cream

  21. 21

    lower the heath

  22. 22

    give it a good stir and cook slowly

  23. 23

    remove the chicken from the cling film

  24. 24

    put the chicken in the sauce

  25. 25

    cover and cook for an other 5 minutes

  26. 26

    and serve
