Ingredients

4 servings
  1. 1 1/2 cuplighly packed fresh cilantro leaves
  2. 1/4 cupwater
  3. 2 tbsplime juice
  4. 1 tspground cumin
  5. 1/2 tspsalt
  6. 1/4 tspblack pepper
  7. 1/4 tsphot pepper sauce
  8. 2(1/2 pound) salmon steaks
  9. 1yellow bell pepper cut into strips
  10. 1red bell pepper cut into stripts

Steps

  1. 1

    combine cilantro water, lime juice, cumin salt, black pepper and pepper sauce in food processor. transfer to large zip close plastic bag and marinade salmon in refrigerator

  2. 2

    preheat oven to 400°F. spray 9 inch baking dish with nonstick spray

  3. 3

    spread bell peppers in single layer and bake for 15 minutes or almost tender.

  4. 4

    remove salmon from marinade discard marinade. place salmon on top of bell peppers. bake until salmon is just opaque in center, about 5 minutes per side. Cut salmon steaks in half.

  5. 5

    PointPlus 5 per 1/2 salmon steak and about 2/3 bell peppers
