In a work bowl, combine shrimp, sugar, soy sauce, oyster sauce, garlic, & black pepper. Toss & mix until shrimps are coated. Marinate 3 - 5 minutes, uncovered & unrefrigerated.

Heat oil in a wok on high until just about to smoke. Stir-fry shrimp & marinade for 3 minutes, until shrimps are seared, browned, and plumped. Remove from heat.

Line plates with greens. Transfer shrimp to plates. Top w/ bell pepper strips, cilantro, and tomato slices. Accompany w/ Thai-Lemon Coriander Sauce.
