Ingredients

frying
makes 4 vadapav
  1. For the vadas
  2. 1 tbspoil
  3. 1 1/2 tbspfinely chopped Ginger garlic and Green chilli paste
  4. 1/2 tspmustard seeds
  5. 1/4 tsphing
  6. 5-7curry leaves
  7. 1 1/2 cupsboiled and peeled and mashed potatoes
  8. 1 pinchturmeric powder
  9. to tasteSalt
  10. 2 tbspfinely chopped Coriander leaves
  11. Oil for frying
  12. For the batter
  13. 3/4 cupBesan
  14. to tasteSalt
  15. 2 tspoil
  16. 1 tspsoda
  17. 1/4 cupwater
  18. For serving
  19. 4laddi pav
  20. Meetha chutney
  21. Tikkhi chutney
  22. Sukhi lahsun ki chutney
  23. 8-10fried green chillies

Steps

    For the vada

  2. 2

    Heat the oil in a small kadhai and add mustard seeds.

  3. 3

    When the seeds crackle add the hing and curry leaves and saute on a medium flame for few seconds.

  4. 4

    Add the ginger garlic chilli.paste and mix well.

  5. 5

    Add the potatoes, salt and turmeric, mix well and cook for a minute.

  6. 6

    Add the chopped Coriander and mix well.

  7. 7

    Remove from flame and keep aside to cool

  8. 8

    Divide into 4 equal portions and shape each portion into round balls.

  9. 9

    Dip each vada in the prepared batter and deep fry in hot oil till golden brown in colour.

    Assembling of vada pav

  11. 11

    Slit a Pav horizontally, apply meetha chutney, theekhi chutney and sukhi lahsun chutney on the inner sides of the Pav and stuff with a hot vada..

    Repeat with the remaining ingredients to make more vada pav.

    Deep fry the green chillies and serve with vada pav.

    This tempting street food can be served at small parties, get together soon and kitty parties.
