For the vada

Heat the oil in a small kadhai and add mustard seeds.

When the seeds crackle add the hing and curry leaves and saute on a medium flame for few seconds.

Add the ginger garlic chilli.paste and mix well.

Add the potatoes, salt and turmeric, mix well and cook for a minute.

Add the chopped Coriander and mix well.

Remove from flame and keep aside to cool

Divide into 4 equal portions and shape each portion into round balls.

Dip each vada in the prepared batter and deep fry in hot oil till golden brown in colour.

Slit a Pav horizontally, apply meetha chutney, theekhi chutney and sukhi lahsun chutney on the inner sides of the Pav and stuff with a hot vada..

Repeat with the remaining ingredients to make more vada pav.

Deep fry the green chillies and serve with vada pav.
