Combine beef or chicken with soy sauce,sherry and ginger. Let stand 15 to 30 minutes

Heat 1 tablespoon oil in skillet about 2 minutes. Add carrots and stir fry for 2 minutes

Add mushroom liquid and cover and steam for four minutes

Remove carrots

Heat another tablespoon oil and add cauliflower and pea pods, stir fry for 2 minutes

Add onions and mushrooms and stir fry for two minutes

Remove vegetables

Heat third tablespoon oil and add meat and marinade. Stir fry for two to three minutes

Return vegetables to skillet with meat. Combine water and cornstarch and sugar and stir into meat mixture and cook until thickened

Serve with rice
