bring water to boil, remove from burner and stir in sugar and corn syrup

stir until dissolved

return to burner and bring to a boil

after it has begun to boil cover and steam until all crystals are dissolved (1 - 2 mins)

uncover and cook until 310° registers on candy thermometer

remove from stove and add oil for flavor and color

butter well a marble slab or other hard surface and drop candy on the slab in strips or chunks

when solid but not too stiff cut into pieces with scissors

suggested flavors: wintergreen, cinnamon, peppermint, lime, orange, or anise
