Ravioli "Lasagna"

This is definitely the lazy girls variation of lasagna. This is only 5 ingredients total If you're using jarred sauce. I usually try to make a homemade sauce in advance for this, but even doing that it's still a very easy meal to prepare. It is so quick to throw together for a delicious, kid-approved weeknight dinner.

Ravioli "Lasagna"

Ingredients

4 servings
  1. 1 bag (30 oz.)frozen ravioli (whatever flavor you like)
  2. 1 jar (28 oz.)marinara sauce (or equal amount homemade)
  3. 2 cupschopped spinach
  4. 2 cupsshredded mozzarella cheese
  5. 1/2 cupshredded parmesan cheese

Cooking Instructions

    Preheat the oven to 375°F and grease a 9x13" pan. Place 1/3 cup of the sauce evenly over the bottom of the pan. Then place a layer of the ravioli (no need to thaw or cook them first, they will come out of the oven perfectly tender). After that, spread 1 cup of the chopped spinach, 1/3 of the mozzarella cheese and 1/3 of the parmesan cheese.

    Repeat with another layer of ravioli, then 1/3 more sauce and using up all the spinach in this layer. Too it off with 1/3 of each cheese. The 3rd and last layer will just have the ravioli, then sauce and cheeses.

    Cover the pan with foil and bake for 35 minutes. Then remove the foil and bake for 15 minutes more, until the cheese is golden and it's all bubbly and completely heated through. Let it sit for 5 minutes before serving. Garnish with some freshly chopped basil or parsley, if you'd like.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own. If there's no source listed, then it's a rare recipe that I came up with. I have two wonderful kids and I hope to pass on my love of cooking and baking to them.
