Take large mixing bowl coat 1 teaspoon salt on bittergourd, mix well. Add 3 glass of water on that and keep aside for 1/2 hour.

Drain extra water and wash bittergourd 2 3 times in running water. Keep bittergourd slices on paper towel for 10mins

Now take large tray and mix ingredients (bittergourd, gramflour, salt, red chilli powder, garam masala powder, chat masala powder, coriander powder and mango powder)

Heat oil and fry the bitter gourd till the golden brown. Take out on absorbing paper.

Store this in airtight jar.
