Heat 4 tablespoons oil in a kadai or pan add chopped veggies and begin to fry them.

Remove with a slotted spoon and drain on kitchen paper towels.

In the same oil add onions stir and saute till the onions turn a light brown.

Add asafoetida and stir.

Add all the spice powders - red chilli powder, turmeric powder, coriander powder and garam masala powder. stir well.

Add the fried veggies.

Mix and stir the veggies and allow them to simmer for 2 minutes.

Now add water. stir.

Serve mix veggie with phulkas.
