If using milk, scald it before use

Disolve the yeast in warm milk/water for 5 minutes

Mix in the bread flour and set aside, covered, to ferment overnight in a cool place

In the morning add the Graham flour, salt and sugar. Beat at medium-high speed until gluten forms.

Put dough into plan and let rise, covered, until it reaches about 1 inch above the pan sides. Spray with water and bake in a preheated over of 400°F for 15 minutes.

Lower tem to 350 and bake for an additional 20-25 minutes
