In a saucepan put sugar, butter, eggs, dates and pineapple.

Cook over Med heat until thickened.

Stir occasionally.

Add pecans cook 15 minutes more stirring frequently.

Remove from heat and cool completely.

When cool put about a teaspoon in between two wafers.

Roll wafer in powdered sugar.

Place in an airtight container and store overnight.

Note : The cookies will get soft overnight.

Yield: about 100 cookies
