lighty grease muffins cups. place butter cookie at the bottom of the cup. beat cream cheese add sugar, lemon rind, juice and vanilla until smooth. gradually add eggs beat well. put mixture in jug for easy pouring. bake for 20 mins or until set. let cool for 5 mins. run knife round cup and serve with whipped cream or ice cream and mixed berries
