put the cream on a low heat

in a separate bowl from the cream whisk together 4 egg yolks and the sugar. the egg whites are not needed for this recipe.

once the cream has started to bubble, add the egg and sugar mix. whisk in for 2-3 minutes to ensure the egg is cooked.whilst thinking add the vanilla.

add the leaf gelatin and whisk until it has dissolved

pour into ramakins or small bowls.

leave to cool at one side until cool enough to put in fridge.

put into fridge and leave to set for 1 hour

either sprinkle with caster sugar and blowtorch until golden, or,heat some sugar in a pan until golden and pour over.

serve, eat, enjoy.
