Ingredients

  • 400 gramssalmon fillet, skinless,bones removed, diced
  • 1 tbspcapers
  • 1 tbspraisins or currants
  • 1 tbsppickled ginger,shredded,with a little juice
  • 1/4 cupskinless roasted almonds
  • 1/4 cuproasted pinenuts
  • 1orange,lime &lemon, zest,segments and juice
  • 3 tbspitalian parsley, coriander & basil, chopped
  • 1salt & pepper to taste

Steps

  1. 1

    mix all ingredients together in a bowl and refrigerate for a maximum of 4 hours. Gently mix after each hour. Serve with salad greens ie rocket
