Steps

Purèe the watermelon in batches. Strain out the juice into a separate container, and reserve. Put the watermelon pulp into a large bowl.

Purèe the jalapeños, then add the shallots, garlic, greens, vinegar, olive oio, salt and pepper. Purèe again, then add to watermelon.

Pulse the cucumber and red bell pepper in the food processor and add to the bowl, along with the lime juice.

Stir it all together, then add the watermelon juice until you like the consistency, adjut seasonings to taste.

Chill well and serve.
