gradually add castor sugar and beat until smooth and stiff

spread meringue mixture into a Swiss roll tin which has been. greased and lined with baking paper sprinkle with cornflour

sprinkle surface of meringue with combined almonds, sugar and cinnamon

bake in a moderate oven 190deg for 8 to 10 mins or until meringue is firm

Turn out onto a sheet of greaseproof paper, set aside for 8 mins

Spread with cream and. fruit of choice

Roll up an put in freezer for 30 mins then keep in fridge until ready to serve
