Try this farm/bush favorite easy to make quiche.
Steps

Dice up the onions, garlic and bell peppers

Harvest fresh greens from the farm

Light the Cookswell oven jiko and get it going to a medium hot temp

Mash the onions etc. in with the mashed potatoes with a few spoons of oil and bake until almost brown and crispy.

Cut up the green leaves and saute the kunde and spinach a tiny bit - the moringa will go in raw.

Pour the beaten eggs and green veg into the baking pan and bake until the eggs are set

Serve hot with chillies on the side
