  1. 4beets
  2. 3parsnips
  3. 2sweet potatoes
  4. 2turnips
  5. 1rutabaga
  6. 2 tbspolive oil
  7. 1 tbspsalt and pepper
  8. 4 clovegarlic
  9. 1/3 cupveggie broth
  10. 1/3 cupbalsamic vinegar
  11. 4 ozgoay cheese
  12. 5carrots

Cooking Instructions

    preheat oven to 450°

  2. 2

    chops all veggies to 3/4"

  3. 3

    toss veggies with oil, salt, and pepper

  4. 4

    roast in oven for 20 minutes or until slightly soft

  5. 5

    stir in liquids and roast for another 10 minutes

  6. 6

    once tender, remove from oven and toss with goat cheese
