
Traditional English Fruit Cake

Steps

pour the Orange juice over the dried fruit and soak overnight.

sift together the flour,baking powder,salt and spices.

cream the butter with the sugar.Beat in the eggs,one at a time,with 1 tbsp of the flour mixture.

stir in the remaining flour mixture and the dried fruit,peel,cherries and nuts.

Line the base of a 25cm/10inch round cake tin and grease the sides.pour in the cake mix.Bake in an oven preheated to 150c/300f/gas2 for 2-2 1/2 hours.If the top is getting too brown,cover with greaseproof paper.when cookef, a skewers inserted into the centre of the cake should come out clean.

cool in tin for 30mins. Turn out onto a wire rack to cool thoroughly. wrap in foil and store in cook dry place.

Warm the jam and water and press through a sieve.Brush the top of the cake with some glaze and decorate with the fruit and nuts.Brush with the remaining glaze.
