This is an awesome spicy creole dish. I added chorizo sausage to the creole mix and it gives it an even better kick.

Ingredients

  1. 2 lbmedium shrimp
  2. 1/4 cupbutter
  3. 1 1/2 cupchopped onions (3 medium onions)
  4. 2 cupchopped green bell peppers (2 medium)
  5. 1 cupchopped celery (2 stalks)
  6. 2 clovegarlic, finely chopped
  7. 1 cupwater
  8. 2 tspchopped fresh parsley
  9. 1 1/2 tspsalt
  10. 1/4 tspCayenne pepper
  11. 2dried bay leaves
  12. 1 can(15 oz) tomato sauce
  13. 6 cuphot cooked rice
  14. 1 packageschorizo

Cooking Instructions

    Peel and devein shrimp. Cover and refrigerate.

    In 3 quart saucepan, melt butter over medium heat. Cook onions, bell peppers, celery and garlic in butter about 10 minutes, stirring occasionally until onions are tender. Cook chorizo separately and remove grease.

    Stir in remaining ingredients EXCEPT rice and shrimp. Heat to boiling; reduce heat to low. Simmer uncovered 10 minutes.

    Stir in shrimp. Heat to boiling; reduce heat to medium. Cover and cook 4 to 6 minutes, stirring occasionally, until shrimp are pink and firm. Remove bay leaves. Serve shrimp mixture over rice.
