bring to boil and cook for one hour, uncovered.

cover,reduce heat, simmer, two hours.

pour Apple mixture through a strainer.

discard solids.

strain cider again, through a cheesecloth_lined strainer.

serve hot or cold.

Garnish with a cinnamon stick, if desired.
