Spicy roast potatoes
These are a weekly staple in our home. They are usually accompanied by grilled chicken or grilled sausages and a salad

Peel and wash potatoes. Cut to desired size. I usually alternate between big/small cubes and thick wedges

Place potatoes in a cooking pot, add desired salt and fill with hot water until just above the potatoes (2 inches)

Place the pot on the cooker and boil. Once the potatoes come to a boil, boil for a further 5 minutes then switch off and remove from the cooker. At this point you can preheat the oven at 200 degrees.

Use a colander over the sink and drain the potatoes.

Return the drained potatoes to the pot and add the Olive oil and spices. Toss to mix together.

Grease your oven tray with some olive oil and pour the spiced potatoes onto it.

Place the potatoes into your pre-heated oven and roast until nice and golden.

When one side has turned a nice golden brown, turn them over and do the same with the second side.

Once ready, serve with an accompaniment of your choice.
