Ingredients

4-6 servings
  1. 4large sweet potatoes-try to get long and straight ones
  2. 1 tablespoonhigh heat oil, like peanut oil
  3. 1 tablespoonsalt, onion powder, garlic powder
  4. 1/2 tablespoonblack pepper, chili powder, paprika
  5. Olive oil to coat

Cooking Instructions

  1. 1

    Peel and sliced your potatoes into 1/2 " wide matchsticks.

  2. 2

    Preheat oven to 450 and liberally oil a large sheet pan with peanut oil

  3. 3

    Toss potatoes in olive oil and season liberally

  4. 4

    Spread out on prepared pan. Do not crowd or they will just steam.

  5. 5

    Cook on top rack 20-25 minutes turning twice throughout cook time

  6. 6

    Allow to cool 5 minutes before serving.. it helps crispen them more
