In a bowl toss apples with lemon juice

In a separate bowl combine sugar flour cinnamon salt and nutmeg

Add sugar mixture to apples and toss

Pour filling into crossed and dot with butter

Play spades tree over top of filling cut slits in the top

Trim feel and flute the edges

Beat egg yolk and water. Brush over the pastry top

Bake at 425°F for 15 minutes

Reduce heat to 350°F and bake for 40 to 45 minutes more or until crust is golden brown and billing is bubbly
