Ingredients

4 servings
  • 1 lbchicken
  • 1 canrotel
  • 1 candiced tomatoes
  • 1 tbstaco seasoning
  • 8 ozcream cheese
  • 1 cupwater
  • 10 ozcan red enchilada sauce
  • Garnish: tortilla strips, cilantro, shredded cheese

Steps

  1. 1

    Cook and shred chicken

  2. 2

    Add all ingredients (except cream cheese) to pot and bring to a boil

  3. 3

    Reduce heat to simmer, add cream cheese in chunks, stir until cream cheese is melted.

    Garnish and serve
