Ingredients

1 cupquinoa
2 1/2 cupschicken or vegetable broth
1onion, chopped
1 tbsolive oil
2bell peppers, chopped
1/2 cupchopped or shredded carrots
1 canbeans
1 headbroccoli, chopped
3celery stalks, chopped
1 tbsgarlic
Salt and pepper
You can add in any vegetables you like!

Rinse quinoa, dump into crockpot, add olive oil to coat

Stir in remaining ingredients, cook on high 2-4 hours or low 4-6 hours.

Quinoa is done when you can fluff it with a fork, liquid should be absorbed
