Ingredients

  • 1 cupquinoa
  • 2 1/2 cupschicken or vegetable broth
  • 1onion, chopped
  • 1 tbsolive oil
  • 2bell peppers, chopped
  • 1/2 cupchopped or shredded carrots
  • 1 canbeans
  • 1 headbroccoli, chopped
  • 3celery stalks, chopped
  • 1 tbsgarlic
  • Salt and pepper
  • You can add in any vegetables you like!

Steps

  1. 1

    Rinse quinoa, dump into crockpot, add olive oil to coat

  2. 2

    Stir in remaining ingredients, cook on high 2-4 hours or low 4-6 hours.

  3. 3

    Quinoa is done when you can fluff it with a fork, liquid should be absorbed
