Amazing oatmeal raisin cookies

This recipe originally from mrs. Fields recipe, but I slightly modified it.
I cut the sugar into half, reminding that sugar here is sweeter than sugar outside southeast Asia. So if you live outside southeast Asia, feel free to add more sugar, up to double the amounts.
I used granulated brown coconut sugar but you can change it into brown sugar.
This soft baked cookies in not too sweet, just the way I like it.

Ingredients

20minutes
  • 1/2 cup (113 gr)butter, softened
  • 1/4 cupbrown coconut granulated sugar
  • 1/8 cupgranulated sugar
  • 1egg
  • 1/2 tspvanilla extract
  • 3/4 cupall purpose flour
  • 1/2 tspbaking soda
  • 1/2 tspcinnamon powder
  • 1/4 tspsalt
  • 1 1/2 cupquick oat, uncooked
  • 1/2 cupraisins
  • 1/4 cupchopped walnut, toast in the oven for 10min

Steps

    Preheat the oven 350°F (175°C)

  2. 2

    Sift the flour, salt, baking soda, cinnamon powder. Set aside.

  3. 3

    Put butter, brown sugar, and granulated sugar in a mixing bowl. Using hand mixer, mix until fluffy and light.

  4. 4

    Add in egg and vanilla extract, keep mixing with medium speed for 2-3min.

  5. 5

    Lower the speed, then add flour mix, mix until no more flour appears. Add in the oats, continue mixing until just combined.

  6. 6

    Add in raisins and chopped walnut. Fold until well mixed.

  7. 7

    Scoop the cookie dough about 1 tablespoon and put on baking tray. Bake about 10minutes or until brown.

  8. 8

    Remove the cookies from baking tray, and let cool on wire rack.
