i started with a recipe from copykat recipes and modified slightly. the biggest difference is reduction in oil, addition of garlic and red pepper and more parmesan. the original recipe calls for different types of flour but i just used a normal tapioca flour and added some sugar. i will take pictures of the next batch i make. i am also going to try making extra batter and using that over a few days to see how well it keeps.

preheat oven to 425

lightly grease or spray muffin pan. if you can find the deep smaller muffin pans or popover pan it will work better

crush the garlic

mix all ingredients together until smooth

the batter will be very liquidy

pour batter into each cup. only fill 1/2 to 3/4.

bake for about 15 minutes or until they look done
