Steps

Wash beans and set aside.

In a large soup pot, saute carrot and celery in olive oil.

Add everything else except pasta.

Bring to boil.

Cover partially, reduce heat and simmer for 2-3 hrs until beans are tender.

Add pasta.

Cook 5-7 minutes or until pasta is tender / al dente.

Remove and discard bay leaf.

Garnish with cheese.
