Preheat the oven to 180°C. Spray a large oven-proof dish with non-stick spray. Clean the livers, remove the membrane and any hard tubes. Dice and season well with salt and pepper.

Sprinkle with flour and fry in heated oil until brown but still slightly pink inside. Tranfer into the prepared baking dish and ser aside. Fry bacon until crisp and golden brown.

Dice and set aside. Heat oil in a fairly large pan and saute the onion and red pepper until just tender. Add the carrots and potatoes and continue frying until the veg are tender but not soft. Add bacon and season with lemon juice, nutmag, salt and pepper. Spoon the veg mixture over the liver and mix lightly. Beat the eggs and milk until well blended and pour over the liver.

Bake for about 30-40 minutes or until done. Serve immediately . Serves 6.
