Steps

cook sugar over med. heat until melted & deep golden. remove from heat & stir in juice, 2 T. butter, 1/2 t. salt & 1/4 t. pepper. return to med-low heat & stir until dissolved. cool for 10 min.

toss caramel with sweet potato & apple cubes & bake, covered, at 400 for 35 min., stirring once.

melt remaining 3 T. butter & toss with bread cubes & 1/4 t. each salt & pepper. toast in lg. skillet. sprinkle over casserole & bake 10 more min. sprinkle with parsley.
