In a stand-mixer bowl over gently simmering water, whisk egg whites and sugar until sugar is melted.

When melted' attach bowl to mixer. Add whip attachment and add butter in 4 to 6 portions and fully incorporate. Add the creme de menthe (or liqueur flavoring of choice) and vanilla. Mix thoroughly.

Frosts one 9" cake.
