Heat oven 200°c or 190°c fan bake.Tray just below middle of oven.

Saltanas in bowl cover with boiling water.Leave 2-3 minutes.Drain.Cool with cold water drain.Pat dry with paper towels.

Into large bowl add peaches fruit and juice.Add next 4 ingredients.Then add sultanas

Measure the remaining ingredients into a medium size bowl.Toss well with fork.Fold the dry ingredients into the fruit mixture.It will look lumpy because of fruit

Makes 12 regular ot 24 mini.muffins.Bake 10 -12 mins

Peaches should be in the list under sultanas
