Non-Sticky Peanut Brittle

Make your own peanut brittle! Last time, I had leftover peanuts from making nougat, so I added maltose to create peanut brittle. Every year, I visit the Nangang Exhibition Center's baking show, which features a wide array of baking materials, sugar art, and blown sugar creations. It's impressive! You can also see the competition entries like bread and pineapple cakes. Even if you don't win, there are reputable bakeries with great reviews. They even sell nuts at a lower price than outside, or you can buy pre-baked nuts. Practicing making peanut brittle with these nuts is a great choice. February 9th is the day to send off the gods, and during the New Year, we also offer candies. You can make candies yourself too.

Ingredients

15 minutes
Serves 5 servings
  1. 300 gpeanuts in shell
  2. 50 gmaltose
  3. 1/4 cupwater (50 cc)
  4. 3 tablespoonsgranulated sugar (40 g)
  5. 1/4 cupvegetable oil (50 cc)
  6. 1/2 teaspoonsalt

    Ingredients are as listed above.

    Put water, maltose, granulated sugar, and salt in a pot and cook until the sugar dissolves and the water boils.

    Add blanched cooked peanuts (or roasted peanuts) and vegetable oil. Cook over medium heat, stirring constantly. When it bubbles, reduce to low heat and stir the peanuts for about 15-20 minutes. Taste to check if the peanuts are cooked, but don't let them burn.

    Drain the oil and place the mixture on candy rice paper. Press down firmly with a spatula, let it cool, then cut into pieces. Store in a bag and enjoy piece by piece!
