  • 1 tbspChinese 5 spice
  • 4 tbspOlive oil
  • 1 tbspdried or fresh thyme
  • 2 tbspFresh Mint
  • 1/2Juice of Lemon
  • 2Duck breasts
  • 1Red Chilli

Steps

  1. 1

    Mix oil, 5 spice and thyme into a bowl

  2. 2

    Score skin & season - add oil to pan, skin side down until brown, add oil mixture

  3. 3

    Once brown, place duck on a plate to rest - chop mint & chilli

  4. 4

    Mix mint, chilli, lemon juice & the cooking juices, slice duck and pour mixture over
