Ingredients

6 servings
  • 1 tbspolive oil
  • 3/4 cupchopped onion
  • 3/4 cupchopped carrot
  • 1 tspbottled minced garlic
  • 1 1/2 lbboneless skinless chicken breast cut into 1/2 inch pieces
  • 232oz boxes chicken broth
  • 3/4 cuporzo pasta
  • 16oz bag baby spinach stems removed
  • 2 tbspfresh lemon juice
  • 1 tspdried dill
  • 1/2 tspground black pepper

Steps

  1. 1

    in a large Dutch oven,heat olive oil over med heat. add onion carrot and garlic. cook stirring frequently.add chicken and cook stirring frequently 6minutes.

  2. 2

    add broth,boil over med/high heat.add orzo and simmer 8minutes or til orzo is tender.

  3. 3

    add spinach,lemon juice,dill,and pepper. cook two minutes til spinach is wilted.
