Peel the outside skin off the pineapple

Pour the sugar into a large bowl and stir in all of the cinnamon

Dip and roll the pineapple in the cinnamon sugar until completely covered

Skewer both ends of the whole pineapple and place on the barbecue, turning frequently and quickly so that the cinnamon sugar caramelises the complete pineapple.

After 10 minutes, remove from the barbecue, and place on a plate. Remove the skewers and slice into twelve. The pineapple will be easy to slice. Eat immediately, the pineapple should be warm, delicious and very juicy!

Improvise! You could add a pinch of nutmeg or vanilla if desired to the sugar pre-cooking, this recipe is lovely as it is but goes well with a nice scoop of vanilla ice cream! This recipe could also be cooked indoors under the grill!
