  1. 4 eachRed Bell Peppers
  2. 1 lbGround turkey
  3. 1 mediumzucchini
  4. 6 smallMushrooms
  5. 1 smallOnion
  6. 1 dashFreshly grounded black pepper
  7. 1 dashSalt
  8. 1 pinchgrounded Oregano
  9. 1 dashSeasoning of your choice.
  10. 1 dashSugar
  11. 1 dashSoy sauce
  12. 1 largeegg
  13. 1 cupcooked couscous
  14. 1/3 cupbread crumbs, panko preferred.

    Preheat oven to 400°F.

  2. 2

    Process zucchini, mushroom and onion in food processor until coarsely grounded.

  3. 3

    Mix together the processed vegetables, ground turkey, couscous, egg, soy sauce and seasoning. Season to taste.

  4. 4

    Remove stem, rib and seeds from the peppers. Cut peppers in half.

  5. 5

    Stuff the pepper halves with the meat mixture.

  6. 6

    Arrange stuffed peppers on glass baking dish and top with bread crumbs. Season with salt and black pepper to taste.

  7. 7

    Bake until the meat mixture is fully cooked, about 30 minutes.

  8. 8

    Let cool for at least 5 minutes. Enjoy!
